Thanksgiving is just around the corner, and while anytime is a great time to remember what we’re thankful for, I appreciate having a holiday that encourages me to stop and take a beat to be mindful of what is most meaningful to me.
Family and food, certainly, which is the part of the holiday I most look forward to.
I am grateful that there are a lot of ways to add fresh produce to a Thanksgiving meal as I continue to strive to eat more fruits and vegetables, for a healthier me and a healthier planet. Raw veggies and dips, fruit salads, roasted brussels sprouts and root vegetables, green bean dishes, butternut squash soup, mashed potatoes, sweet potatoes, salads with a mix of greens, fruit, nuts, grains - and let’s not forget the pumpkin and apple pies.
