This recipe originally showed up in Shepherdless Pie for the Ultimate Vegan Thanksgiving.  That recipe is so good, with elements from the dishes we think of when we think about Thanksgiving all rolled up into one dish.  I'm not going to lie, though - creating Shepherdless Pie takes some time.  So in case you'd just like a nice gravy to serve over your nut loaf, stuffing, and mashed potatoes, I've broken out the mushroom gravy layer from the Shepherdless Pie for you here.  This gravy is wonderful for the holidays, but also on regular days through the fall and winter.  I hope you end up using it frequently through the seasons!


EASY MUSHROOM GRAVY RECIPE

Cook time:  30 minutes
Total time:  50 minutes

INGREDIENTS

  • 3 cups onion
  • 10 garlic cloves, minced
  • 6 cups sliced mushrooms
  • 2 soft sprigs rosemary, about 2 inches in size, minced
  • 2 sage leaves, about 2 inches in size, minced
  • 1 teaspoon dried thyme
  • 2 cups vegetable broth
  • 2 cups plant milk (I used cashew)
  • 2 tablespoons tamari or coconut liquid aminos
  • 6 tablespoons nutritional yeast
  • 6 tablespoons whole grain flour, or for gluten-free, oat flour or cornstarch
  • 1 cup water
  • 1/2 teaspoon salt & pepper (or to taste)

METHOD

  1. Mix the flour/cornstarch with the water.  
  2. Preheat a saucepan, preferably a narrow pot with tall sides.  Add the onion, garlic and mushrooms and cook over medium-low heat, stirring occasionally for about 15 minutes, until all have softened and browned a bit.  
  3. Stir in the herbs, then the broth, plant milk, and tamari/liquid aminos.
  4. Bring to a boil, stirring occasionally, then reduce to a simmer and stir in the nutritional yeast, salt, then the flour/cornstarch and water mixture.  Continue to stir occasionally until thickened.  
  5. If you'd like a smooth gravy, puree with an immersion blender.
  6. Serve with a smile.
