Shiitake Your Bacon
Bits of mushrooms baked to crisp bacon-y goodness. What could be better? No pig friends involved in the making of this salty, smoky snack. Just the good stuff here. If you're trying to eat more veggies, this shiitake bacon makes it easy. Add it to anything you'd imagine adding bacon too - which is probably just about everything!
I love this recipe for a lot of reasons. One: It's quick and easy. Just six ingredients, including salt! Two: It's light. No oil required. Three: It's crispy and delicious. Okay, that was two things, so three and four. Five: It's satisfying. Mushrooms are meaty and filling, and even though this shiitake bacon can end up more like bacon bits, depending on the size of the mushrooms you use, the texture is satisfying. Six: It's versatile. Like bacon bacon, it goes great with most things. Are there more reasons? Yes. But I'm taking a break to eat some.
Smoked paprika and coconut aminos bring out the smoky saltiness that bacon is known for. This bacon is really meant to be used as a garnish, as it's best sprinkled throughout a dish. But some have been known to eat the whole tray as it is, while it's cooling. I won't name names.
