VEGAN | WFPB | EASY | GLUTEN-FREE | OIL-FREE | 30 MINUTES OR LESS
This dish began with the desire to load lots of veggies into a dish while building in layers of flavor and keeping the process quick and easy for busy nights, something that could be thrown together after a long day of work yet seem like it took hours.

This week, I would like to offer a moment of appreciation for the beautiful ingredients we have enjoyed this past summer. Can you think of a favorite farmers market find that made you smile with delight? Maybe something from your own garden, or an offering from a generous neighbor? I have lots of new favorite foods that happen to be nutritious. And I love the freedom of eating without counting anything. There is so much built-in nutrition with nearly everything I eat now, I no longer feel the need to keep track.Read More
